Greek Yogurt Covered Blueberries

This fun and easy recipe contains only 3 ingredients! It is sure to delight guests who are looking for a healthy option on the table. This light snack is also good at the end of a meal if you’re looking to satisfy a sweet craving. Let’s begin!

Ingredients:

3/4 cup organic non-fat Greek yogurt

1 cup organic blueberries

1 tbsp raw honey

Method:

1. Melt the honey and mix with the Greek yogurt.

2. Roll a few blueberries at a time in the mixture, then scoop out with a spoon.

3. Place them on a baking tray lined with parchment paper or aluminum foil.

4. Freeze for 1 hour.

5. Pop off each one, wait 1 minute and serve!

Benefits of this snack include:

  • Low in calories.

  • Excellent pre-workout or post-workout fuel.

  • High in nutrients and antioxidants from the blueberries.

  • Contains amino acids and probiotics from the Greek yogurt.

  • Antibacterial, antifungal, and anti-inflammatory properties from the honey.

This snack is made with ingredients we often have on hand in the pantry or fridge. I encourage making this snack to cut back on sugar and to replace any desserts traditionally made with white refined sugar.

Healthy alternatives with little effort do exist, and often keep us on track to making healthy food choices.
